This middle zone reduces drag when cutting, helps quickly release food from the blade, and features an edge explicitly sharpened for the bulk of cutting tasks. The Damascus layering at Engetsu's tip/heel zones is different from the circular center – the layering at the tip offers additional control for precision cutting; the layering at the heel is tough and durable in an area that often contacts the cutting board.
